Dip Me Spinach & Bacon Quiche

This quiche is a versatile meal for any time of day!
Ingredients: 
1 pound fresh baby spinach
2 tbsps unsalted butter
¼ cup finely chopped onion
¼ cup finely chopped mushrooms (stems removed)
1 garlic clove, minced
6 large eggs
¾ cup Monterey cheese
½ cup half and half
1/2 cup Dip Me French Onion Sour Cream Dip
4 pieces crumbled bacon
1 prepared pie crust (fresh or frozen)
Salt and freshly ground pepper to taste
1 tsp hot sauce
1 tsp dill (fresh or dry)
1 tsp creole seasoning
Directions: 
-Steam baby spinach in a double boiler approximately 5-7 minutes until crisp/tender. Salt lightly. Transfer to a bowl lined with paper towels and drain.

-Saute' butter in a skillet and add onions. When onions are clear add mushrooms and garlic and cook approximately 3-4 minutes.

-In a separate skillet fry bacon until crispy. Drain on paper towels and chop into small pieces.

-In a large bowl whip the eggs. Make sure you get enough air under each stroke because you want the eggs to be light and fluffy. Add drained spinach, Monterey cheese, half and half, Dip Me French Onion Sour Cream Dip, crumbled bacon, salt and freshly ground pepper to taste, hot sauce, dill, and creole seasoning.

-Pour egg mixture into prepared pie crust and bake in a preheated 350 degree oven for 20-25 minutes. Do not let quiche overcook.
